Tuna Stuffed Eggs

Ryan and I bought a new cookbook, Everyday Paleo Family Cookbook a few months ago. We purchased Sarah Fragoso's first cookbook when it came last year, and we have really enjoyed cooking many of the recipes. This second book did not disappoint! A lot of the recipes are very simple and use common ingredients we typically have on hand. I really like that these recipes don't require a ton of random ingredients and extra trips to the grocery store. I highly recommend this book to anyone looking for some new healthier recipes.

This past weekend I thought I would try a simple recipe from the new cookbook. This variation on the classic deviled egg was delicious. We will definitely be making these again!

Ingredients:

6 hard-boiled eggs (*Ryan actually steamed the eggs instead as they're easier to peel that way)
2 tablespoons homemade Mayonnaise (using another recipe in the book)
Green onion (we substituted diced yellow onion)
2 teaspoons lemon juice
2 teaspoons Dijon mustard
1 can tuna, drained (6 oz)
Chopped dill pickles (optional)
Sea salt & black pepper to taste
Paprika (optional)
