I haven't posted on here in a little while due to how busy I have been lately. I am now on my third week of my Emergency Medicine rotation in the ER, and when I'm not working I've been traveling for interviews. Ryan and I celebrated Thanksgiving a little differently this year. I had an interview at the Carilion Clinic in Roanoke, Virginia the Monday after Thanksgiving. We decided it would be a less hectic holiday if we drove up and spent Thanksgiving with Matt, Carolina, and our adorable niece instead of driving home in the middle of interview season. This was the first trip I've managed to get a photo with the infamous Price Mountain sign.
We stayed at the cabin next to the creek, Craig's Creek to be specific. My sister-in-law, Carolina, has written about this magical place on her blog, you can check it out
here. This is the first year we were really on our own cooking a Thanksgiving meal. We ended up having a
Paleo Thanksgiving
with turkey, sausage dressing, roasted root vegetables, Brussels sprouts with bacon, Hassalback potatoes, and a nut crusted pumpkin pie. You can see how it all turned out
here.
It wouldn't be a trip to the creek without skipping a stone or two. Or at least attempting once in my case.
We really enjoyed our time with Matt, Carolina, and Valrie, but missed seeing the rest of our family. I got to talk to each and every Fogarty family member on Thanksgiving day as the phone was passed around the house, but it wasn't quite the same. Ryan and I took part in a new tradition that Matt and Carolina started this year for Thanksgiving. Although we didn't manage to write down something everyday, we wrote most days one thing we were thankful for. We read these one by one after we had enjoyed our Thanksgiving feast.
After Thanksgiving Ryan and I enjoyed a nice hike. We hiked Sharp Top Mountain and the view was spectacular!
